how do I add a composer to a category?

I'm sure there are instructions for this somewhere but I can't find them. I would like to start categorizing Jewish composers in the Category:Jewish People (which, for some reason, also does not appear in the list of composers by Nationality), but can't figure out how.

Ravpapa, sorry for delay. You have created the category correctly.

here, I also don't see reasons for creating a category based on a religion or belief. The nationality category is only we have for sorting people. Thanks for your contribution, but this category will be deleted. Regards,

I am simply astounded. I consulted with several users about this, all of whom felt the need for a category of Jewish composers. Your unilateral decision that Jewish is not a nationality but a religion is simply exposing your own biases.
Where is the place to discuss deletions like this? It is simply incomprehensible.
