I am about to scan and upload all parts of the Mendelssohn Symphony No.3

So at the end this item will have a complete set of orchestral parts

However how can I put this entry under a category of "symphony with full score and complete parts available"?

Just leave the category as "symphony." The user can see from the "Contents" near the top that there are parts -- if you make sure these subheadings are present and appropriately placed with the uploaded file data:
