I own several original printed books from 1617, mainly English, but a few in other languages. Most are collections of works by many composers. These I would add as a Collection.
How does one add a collection that is not the work of a single composer?
must the submitter (me) then index every work in the collection with each composer represented?

Yes, absolutely. Just add them as you would a regular work under the category of author of the collection or the composer with the greatest number of pieces. If it's more evenly divided among a lot of composer and there is no compiler or editor listed, add under "Various". We'll add the extra field to place into the collections sub-category.
