Couperin's Ordres contain many easy pieces (and hard ones!) that sound great.

Some of Mendelsohn's Songs without Words are very easy, try also Tchaikowski's Seasons (12 months)album for children. I don't know who suggested it, but Chopin's Preludes are anything but easy (except perhaps A major and c and e minor). The E flat major Nocturne is accessible and one or two of the Mazurkas.

I wouldn't agree that Tchaikovsky's "The Seasons" is for children to play. That contains some difficult stuff.
However, his "Children's Album" fits the bill for "easy and beautiful."

Brahms Romance in F major (Kalvierstuck Op. 118 No. 5). What's nice about that one is, it is repetitive, beautiful, and as you improve you can really work on bringing out the various voices. It is a good study in simple counterpoint and sounds lovely. Here's a recording:

Also a lot of the Mozart piano sonatas are not terribly difficult, the famous A major Sonata (No. 11) variations are very pretty and easy because (being variations) there is a lot of repetition.
